Holiday Road....

It is officially road-trip season, and you are probably hitting the pavement soon to experience the ultimate vacation or camp-out with friends and family.   Before you leave... don't forget the snacks for crying out loud.   By hitting the road with no food or drink...it could get ugly and may lead you to foam at the mouth when you see this sign.

Also with those super cool containers I mentioned yesterday this would take the guesswork out of portioning out your food...you could load up and eat healthy while on the road.
I absolutely love the little peanut butter packets you can purchase.. then just cut up either some apples, celery, or what not.. and this makes a great snack.   Also I enjoy Cliff bars as well, or grapes and more...
  • Load up on pre-cut vegetables and fruit. Bring along a small cooler with ice packs to keep your snacks fresh.
  • Bring plenty of fluids (water preferably). It will keep you hydrated and, if you spill it, won't stain the upholstery like sodas.
  • Rusty drinking a beer with Clark

  • Individually wrapped portions of string cheese (kept in cooler ).
  • Bring baked whole grain crackers along on your trip.
  • You can also pack sandwiches made with whole grain bread and peanut butter or lean meats. Keep these in the cooler of course!
  • Nuts such as almonds, cashews, and walnuts contain polyunsaturated fats and are easy to take on a trip in either individual bags or larger containers.

    You might say Dietitians are a weeeee bit OCD.. when it comes to calorie calculations, presentation of food, and portion sizes.   I will openly admit in the past 2 years I have started to more so be cognoscente of my portion sizes... I have even started counting the number of small cookies I will pack in my lunch bag daily.  I found a few items that I may invest in...

    Coconut Continued




    So with all the Coconut hype... everyone wants to know "Where is the evidence?"  A great deal of professionals find the website www.pubmed.gov quite resourceful.  So when the word "coconut oil" is typed into the database there are thousands of studies listed.  So why are all the doctors asking to see the evidence? when it is right there.  I was reading an article lately on the drug "Aricept" which is highly used to treat Alzheimer's.  When the FDA unveiled this drug there were less than 10 studies available to support this.  I am not sure if this statement is 100%, but nothing surprises me anymore.  Coconut research goes way back to the 30's and 40s when  it was discovered when added to the diet it improved absorption of various nutrients.    In the 1950's researchers investigated breaking coconut oil down to pure MCT oil.  MCT's where then discovered to digest differently than other fats, they seemed to digest rapidly and begin breaking down immediately.  It was in the 60's and 70's that MCT's were researched (more so) and used to treat malabsorption syndromes including: Cystic fibrosis, tropical sprue and pancreatic insufficiency.

    As I read more... I started to read about how athletes use coconut oil in their beverages to increase energy and boost metabolism.  So as you look at the back of your commercially produced energy bar or beverage you may find coconut oil or MCT's being utilized in the ingredient list. 

    I then went on to read about "real life" stories about people using coconut oil to treat various illnesses such as lupus and diabetes.  The testimonies go on... and on.

    Coconut oil has been granted "GRAS (generally recognized as safe) status by the FDA and has been around for the past 60 years with no noted adverse affects.  I have yet to read an obituary in the paper:  "woman dies of coconut oil ingestion, after mixing it in her coffee for the past 20 years".   I am going to keep on reading about this for now....and make an educated decision later.. and you can ask me about it at that time.  But I will also leave it to the consumer to make their own decisions.. and if this product is making one feel better than be it. I would still keep in mind the good old Dietary Guidelines for Americans  that no more than 10 percent of their total dietary calories a day should  come from saturated fats.   If you have any success stories or know people using coconut oil.. share your story... we are curious.

    Conundrum with Coconut Oil

    Over the past few years... Coconut oil has received alot of stardom in the health and wellness world.  Despite the glowing reports regarding the benefits of coconut oil that might include:  antimicrobial, anti-cancer, anti-heart disease, and a cure for diabetes and hypothyroidism, there are still alot of skeptics out there.  Those skeptics include, physicians, dietitians, and other health care professionals.  One of those reasons might be is that coconut oil contains a high percentage of saturated fat, and we all know saturated fats are the root of all evil.  Also.. most professionals do not have the peer reviewed articles and research to back up the findings that coconut oil will cure most illnesses and is the superfood its claimed to be. 

    When attempting to get some answers on this... the article I read went right to the horses mouth.  According to the editors from the Journal of the American Dietetic Association "The health benefits of coconut oil help to prevent or mitigate a wide range of medical conditions.  However, there is insufficient evidence to support the claims."   Dr. Andrew Weil also reported "We don't have any evidence suggesting that coconut oil is better for you than other saturated fats".  One person I know that has changed his mind on coconut oil is Dr. Oz.  He now claims he uses it daily, and touts it on his talk show now.   Why the change of heart Dr. Oz??? 

    I actually purchased coconut spread during my cleanse.. and have found it to be quite tastey.  Also started using it when sauteeing vegetables due to the low smoke point yada.. yada.. yada...

    I usually spend my Saturday mornings at a local farmers market, I absolutely love going early so I can get up front and spend time at each booth looking over the produce and asking questions.  Out here if you go too late.. you are doomed. 

    I usually have a list of my favorite items I like to pick up and I will show you just a few of those...

    I like to pick up farm fresh eggs from a local farmer in Sonoma, there is something about a cage-free animal running around the farm that I feel much better about.  My grandmother also used to purchase fresh farm eggs from a local lady where we could actually see the chicken's and hens running around ourselves.

    Fresh Hass Avocado's from California...it's the reason for the season.  Oh.. how I love avocado's... seriously...I never had one till I was 18 years old... how sad!!

    Next up (and don't laugh)... this appreciation goes way back to the days of the school lunch's I used to eat, and it is wax beans.....the cooks in my school used to make a great deal of the food  (in my tiny little K-12 student population of 120) from scratch.  The cheesy-wax green beans...were my favorite.

    Alright...moving on to the next booth I stop by is "Sister Sara's" she is the nicest lady... and I love supporting her business.   I have an addiction to beets... anything beets.  I could even drink beet juice.. no lie! I love a great beet salad with goat cheese.... but I also love pickled beets.  
    Lastly.. I usually end my farmers market rounds with a nice beautiful bouquet of flowers.. this bundle of pollen was only $6.00!!  Unfortunately I am now sneezing and may have to take them to a friend.. as it maybe allergy overload for me.   What is up with this? I have never had allergies up until this year??

    Jumping for Juice?




    During my cleanse (seems like years ago) I was spending a great deal of time at home.  It was easier to stay away from tempting food and mixed drinks and wine if I just stayed home and prepared my own food.  During this time I spent a great deal of time utilizing my Netflix membership.. which I always forget about, and decided to watch a documentary from 2010 "Fat, Sick and Nearly Dead" which hailed a 60-day juice fast as the ultimate path to health.   After I finished watching this I was compelled to look all this up.. and get a grasp on it. 

    First off.. we all know that fruit and vegetable intake has increased health benefits.  BUT.. there is limited research and clinical evidence on the effect of juice and powdered juice on human health.  The research then becomes almost non-existent on fasts and cleanses.  (Oh come on..?)

    Okay.. Simma down now all your juicers, and wanna-be juicers (like myself).  If you feel like this has been a cure all for you and is working, and your not losing your hair, nails and noticed any strange skin abnormalities (vitamin deficiency)... then cheers.. carry on.  But I am just going to point out that Some juice-only diets severely restrict calories and may lack protein which would make it hard for you to maintain muscle mass (good luck with your work out.. just sayin).  Other potential nutrient deficiencies include fat soluble vitamins such as D & E, and B vitamins (especially if the pulp is strained out of the juice).  Keep in mind that juicing can also lead to weight gain if you have not changed any other factors in your diet such as activity and diet.

    You know I am going to also mention that you should ALWAYS wash your fruits and vegetables before juicing. (Seriously.. you should always do this)  Most importantly remember your juice can also develop harmful bacteria quickly so only make enough so you can drink immediately. 

    The American Academy of Pediatrics recommends only pasteurized juice for infants and children to protect them against E.Coli, Salmonella and Cryptosporidium organisms. 

    When I was down in Newport Beach I begged politely asked my friend if we could go to Mother's Market.  It is the "Mothers" of all food and health market's!!

    Just walking by this made me want to have every fruit and vegetable juiced and consumed and maybe do a few push-ups in front of the counter afterwards.   So of course this Registered Dietitian is just as excited as you all are to try new and exciting things.  I decided to leave you with a "Beginners' Green Juice" for you to try:


    2 Cups of Kale
    1 Cup of Spinach
    1 Cucumber
    2 Celery Stalks
    1/2 Green Apple, stem and core removed, skin on
    1/2 Lemon Peeled

    If you NEVER consume fruits or vegetables EVER.. maybe stay close to home after drinking this the first time.. or if you have to be out and about.. be on high alert :)

    Gluten for Punishment??



    I am quite amazed how many of my patients in their late 70's and 80's are turning to a gluten-free diet these days.  I will admit it seems to be the latest rage in the past few years with a great deal of celebrities promoting the diet along with various health practitioners as well.  If you are just stumbling across my blog.. then you have missed out on my previous entries regarding my 28 day experiment where I eliminated gluten from my diet.  Believe it or not but speciality grocery stores are catering completely to those seeking out a gluten-free lifestyle.  I found it practically easy to go gluten-free... and still continue to eat gluten free bread and cookies as I have found them to be tasty... but not low in kcal's and fat.  A recent report on gluten-free products in the US estimated the US market for gluten-free foods and beverages to exceed 5 billion dollars by 2015. (1.)  

    During my month long hiatus from gluten, I did not really notice any overall euphoria that some clients report when eliminating gluten from their diet.   In my opinion I felt as though I was restricting myself from all the beneficial B Vitamins you can find in whole grains.. not to mention the added health benefits.  Honestly I believe people are mis-informed, and are under the impression that a gluten free diet will cause weight loss. At this time.. there is not one.. single... solitary bit of scientific evidence that will support the idea of gluten free diet promoting weight loss and I went to the horses mouth (Academy of Nutrition and Dietetics).  A matter a fact... check the nutrition facts for yourself.. and do the math next time you are shopping.

    I found that my weight loss may have resulted during this time due to the fact that I was not eating as much bread, pasta and carbs possibly.. or felt limited to what I could consume.. so I would end up eating more vegetables in it's place.  Did you hear that... I was eating more vegetables.. which may have satisfied me more in the long run. and kept me from overeating. 

    When my clients or patients come to me and tell me that they are following a gluten free lifestyle.. I usually inquire as to why they chose this lifestyle, and then remind them to make sure to eat foods that make up for the possible iron, folate, niacin, zinc, and fiber deficit they may or may not experience with their current dietary practices.   I then tell them to carry on... if this is what makes them feel better.. and support their goals along the way.  If you would like to know more about following a gluten-free diet... or you have been recently diagnosed with celiac disease then you are in luck.. as there are hundreds and thousands  of great blogs and websites on gluten free living!

    Just the Facts...

    Happy National Buttermilk Biscuit Day!  Who would of known?  Well actually no one really knows this fact.. unless you listen to NPR like I do.  Come on.. there is something to say about NPR.. and the calmness of their voices as they discuss the news... And not to mention the MUSIC!!.. check this clip out.. it is hilarious of the various songs we are allll so accustomed to on NPR...


     On a given day I usually allow myself to take a short 5-7 minute break during my work day to peruse twitter or facebook on my phone to check for the latest diet and health news.  Believe it or not.. but half my facebook timeline is dedicated mostly to health and food related news.  Set aside from celebrity gossip...I absolutely love to read and watch the news.  A select few of you would probably disagree with me.. but I enjoy learning, and sharing with others.   I am that girl woman at work who you might hear over by the water cooler telling everyone " Did you know that about 75 acres of pizza are eaten in in the U.S. Everyday?"   You can compare me to this kid... yes..

    But the only quirk (is that even a word?) that I have with diet and nutrition information is where the facts or articles came from?  Who wrote the article.. or who funded the research.  Have you ever noticed that when a company presents their own research they funded.. the results and outcome usually prove in their favor.  But how many corporations are going to publish research showing that their products have potential for humans to turn into zombies.. or by consuming their products for 10 weeks straight.. they may gain in excess of 100+ pounds.   So always keep in mind who funded the research for the study.. and how many actual participants took part in the study or research as well.   After reading piles of research in grad school on obesity... I am now trained to identify good research from bad.   I also avoid certain health and exercise websites, and/or magazines because I know the writers really have no idea what they are talking about.  I can also tell you.. that when you are looking for a book on diet and nutrition always look to see if a Registered Dietitian has contributed to the book.  We didn't go through 4 years of chemistry, and learn every stage of protein synthesis to not be able to give good information to our clients.  Also remember ANYONE can write a book.. including yourself. 

    Also be cautious of self diagnosing your illness or symptoms.  When I was in graduate school I decided to look up some symptoms I was having before I went to my MD appointment.  I proceeded to show my doctor and explain to him that I was dead on with my diagnosis.  He then looked me dead in the eye.. and asked me "Did you grow up in a jungle in West Africa? because this illness is not common in the mid-west.. a matter a fact only small children get it".   I was sooooo embarrassed and humiliated.. so I took my over achieving graduate school wanna-be attitude and went home.. and decided to NEVER diagnose myself again.  I now keep my mouth shut.. and explain the symptoms.. but occasionally ask the MD in my "RD lingo"... can we run a CBC and U&A to rule out a ......

    • 78 percent are interested in finding new, reliable sources of online information.
    • Fewer than 1 percent of respondents answered “no” to the question “Do you feel that the food/nutrition information you get on the Internet is reliable and trustworthy?”

    1)Who is the author?
    2)What are his or her credentials?  (p.s.  my credentials are MS, RD, in case you were wondering)
    3)Is a credible sponsoring institution identified?
    4)What is the purpose of the information?
    5)Is the site promoting or selling a particular product?
    6)Is the information based on scientific research or opinion?
    7)Is a date listed? How current is the information?
    8)Are there links to other sources of information? (This sometimes provides a clue to reliability, but not always. Anyone can link to another organization’s Web site.)
    9)Are the facts documented with sound scientific references? Or, is the information solely based on personal testimonials?
    10)Is there an editorial board that oversees the content? What is the tone of the writing.. and is the grammar up to par?  (Yikes... as I am mortified to make a grammatical error)...

    Keen-Wha???



    Quinoa....pronounced "Keen-wa"



    I can remember when quinoa became popular years ago.. and everyone was talking about it.. and all of a sudden it was on almost every restaurant menu. 
    It was actually a researcher Philip White, that brought quinoa to light in an obscure 1955 article on "Edible Seed Products of the Andes Mountains." While very few people read White's original article (I know how you feel Philip), in the last few years it seems as though quinoa has been rediscovered.

    So what is Quinoa (Chenopodium quinoa, or goosefoot) its technically not a cereal grain at all, but is instead called a "pseudo-cereal" – a glorified name for foods that are cooked and eaten like grains but with a similar nutrient profile. Botanically, quinoa is related to beets, chard and spinach, and in fact the leaves can be eaten as well as the grains according to the Whole Grains Council.  I recently approached the chef in the kitchen at work.. and asked him "Do you serve Keen-wah (Quinoa) in the kitchen here?"  and his response, "Do you mean kwin-OH-a"... I kind of laughed to myself... as I have researched the appropriate pronunciation in depth on this "pseudo-cereal" ... and it is Keen-wah according to every article I have found....as I had thought. 

    Did you know that there are over 120 different varieties of quinoa?  I had no idea... but the most popular appears to be:  white (sometimes known as yellow or ivory) quinoa, red quinoa, and black quinoa. 

    One of the best reasons to eat quinoa is due to the protein content in it.. for instance: 1 cup of cooked quinoa (185 g) contains 8.14 grams of protein (this is a rough estimate.. as cooking and additional ingredients may add more protein, fat and calories).  It is also gluten-free as well.

    I was discussing Quinoa with a friend.. and we were discussing preparation and purchasing of this friendly food item.  Quinoa has a nutty taste that blends well with all kinds of ingredients. Most importantly.... make sure you rinse it well before cooking: quinoa grows with a bitter coating, called saponin, that fends off pests and makes quinoa easy to grow without chemical pesticides (Hip.. Hip Hooray). While most quinoa sold today has had this bitter coating removed... well some of it..., an extra rinse is a good idea.   Treat it like you are preparing rice....

    I found this recipe I wanted to share (Recipe courtesy of Indian Harvest Specialtifoods).. as the presentation is beautiful, and also looks yummy!

    Indian Harvest Specialtifoods
    Spicy, crunchy, and flavorful, this slaw is worlds above the cabbage-in-mayo concoction you may associate with "slaw." In fact, this dish makes a complete meal, with a wide range of vegetables and protein-packed quinoa.

    Ingredients:

    For the slaw:
    8 ounces black quinoa
    2 cups water
    2 cups red cabbage, shredded
    1 cup snap peas, bias cut
    1 cup carrots, shredded
    1 cup scallions, bias cut
    1 mango, diced small
    1/2 cup fresh cilantro, roughly chopped
    Sesame seeds, toasted, to garnish

    For the dressing:
    1/2 cup orange juice
    1/4 cup rice wine vinegar
    2 tablespoons fresh ginger, minced
    1 teaspoon Sriracha sauce (I have never heard of this.. so I might have to check it out)
    1/4 cup sesame oil

    Instructions

    1. Rinse black quinoa under cold water until water runs clear. Place black quinoa in boiling water and simmer for 12-15 minutes.

    2. In a small bowl combine orange juice, rice wine vinegar, ginger and Sriracha sauce. Slowly whisk in sesame oil to create an emulsion. Set aside to incorporate flavors in dressing.

    3. In a large bowl combine black quinoa, red cabbage, snap peas, carrots, scallions, mango, and cilantro.

    4. Fold in dressing and let chill in fridge. When ready to serve, garnish with toasted sesame seeds.
    Can't get black quinoa? Substitute any color quinoa.

    Wonder Women of the World.. Listen Up!




    Do any of you know that this week we celebrate "Women's National Health Week"? And the day after Mother's day is designated as National Women's Check-up Day.  I cannot tell you how important it is to get yearly check-ups, if that might include: Bone health, breast health, cholesterol screening, colorectal health, reproductive, ect.... you name it... get er' done!! 

    Working in the healthcare field I meet with alot of patients who have never been to the doctor, cannot afford to, or simply just ignore to make it a priority.   I usually meet with the patients just after their heart attack and/or procedure, or when their kidney's have failed to the point they are now on full time dialysis.   This is the hard part for everyone.. because they now have to make drastic changes to their lifestyle in order to survive day to day.. and recover.  If I could only turn back time (in my Cher voice) and tell these individuals that this was preventable.. and by simply making their health a priority, they would be in a better place.  So with this... let's get this party started!



    1.  This week you are going to schedule yourself an appointment and get EVERY area(orifice) of your body checked... that might be skin(for irregular moles), yearly OBGYN visit, or your blood lipid profile. 

    2.  You are going to get your butt off the couch....and exercise.. this might be a 20 minute walk around the park, sprint the stairs or hallways at work (I do this when no one is looking)... I feel like an elementary kid running in the hallway.. and make abrupt stops as I am walking by someones office.. so they don't think I am an escapee from the psych unit (where I also do consults)
    This is NOT me.. but this is sort of kind of what I look like with a few spectators
    Or sign up for a race....for the heck of it like I did... and look what I received at the finish..

    3.  Eat Healthy!!!   So I could make this a 100 page blog entry just on how to eat healthy... but I am going to condense it into a few key comments.   First off.. start out by really paying attention to what you are eating...keep a journal... or just a simple notepad on your kitchen counter.. and at the end of the day look at it.. and then make the necessary changes.  For instance... I did this activity just for breakfast.. and realized I was consuming almost 300 calories just in juice one morning.. it is amazing I am not in diabetic shock right now, or missing my feet.  Anyways... secondly...start with baby steps.  Maybe it might be changing up your creamer in your coffee, avoiding artificial sweeteners, going from whole milk to skim, I could go on... and on.. and on... but just make a few simple changes.   I can officially declare that I have went from 6 cups of coffee every morning (by 10AM) to now just 1-2 days a week of coffee.   Disclaimer:  Do not cut coffee out of your diet cold turkey!!

    4.  Mental Health:  (My favorite area).... when I discuss improving your mental health I do not mean we are going to discuss those hallucinations that have been plaguing you.  What I am getting at is... SLEEP, STRESS and MOOD.   It is quite amazing what an effect sleep can have on your well being...during my 28 day cleanse.. I challenged myself to being in bed by 9:00 or 10:00 each night.  I seriously felt like a new woman after getting more than my usual 6 hours of sleep(which is my usual).  I also didn't look like this anymore..


    Also... remember my blog on Fish Oils??  Read it again...
    I also cannot say enough about the book "Spontaneous Happiness" by Dr. Andrew Weil.  I listened to it while I ran, commuted around the bay area and will probably listen to it again... I feel as though it helped me out this past year through some not-so-fun times (cue the 80's love ballad..whatever)

    Lastly... utilize your friends and family... I love a good laugh.. and I might also add that I have the FUNNIEST friends EVER.   We seriously laugh all the time (even if it's via text)... we can go from a Sally Field bawling session (like on Steel Magnolia's)


    to laughing like like this.....


    It is therapeutic... trust me.  If you have no friends to call (maybe there is something wrong with you).. then watch a few re-runs of "Friends".   When I was living overseas.. my neighbors and I would watch "Friends" to curb the homesickness....it worked.

    I love this episode where the girls decide to be brides for a day.


    So all the ladies out there go out and toast this upcoming week(or day) with your friends... as this could potentially change your life!!

    True Food Kitchen....

    This past weekend... I was able to check off a few items on my bucket list that I have been WAITING to do for the past 6-7 months.   One of these just so happen to involve my favorite guru "Dr. Weil" who I obsess over.   When I discovered that one of his restaurants was in the Newport Beach area.. I jumped for joy.. as I was going to be in Newport Beach over my birthday it just so happened.  This experience was one I am going to talk about for months (maybe years) as I had the best food EVER!!   As a Dietitian I absolutely enjoy wholesome and sustainable food that I can feel good while eating. True Food Kitchen bases its entire menu centered on the principals of Dr. Andrew Weil’s Anti-Inflammatory Diet & Food Pyramid. 

    My friend and I (who is also a Dietitian.. and SMART one I might add) were like two howling dogs everytime we tried a different entree or small plate.  We even spent over 3 hours out on the beautiful patio enjoying our food.

    We started out by experiencing some of the "Natural Refreshers"
    Red Moon:  pink grapefruit juice, yuzu, agave, and soda water (Perfect for the Supermoon that night)



    Next up:  We tried the Panang Curry (brown rice, potato, broccoli, ginger, carrot, mushroom and coconut shellfish broth)


     and then.. we tried the Grilled Shrimp Spring Rolls

    We then went on.. and tried the Carmalized Onion Tart, Thai Shrimp Dumplings... and of course forgot to take a picture of those items...because we were too busy talking, analyzing.. or who knows.

    True Food Kitchen is only in Arizona and California at the present... but I am hoping.. and praying he brings it a little further east... like Denver?? Just sayin....

    After our feast we took off and headed home... and meditated (okay we didn't meditate.. but I know some people who did)... I just think that sounds cooler...... ON THIS..

    Ceviche....Cebiche....or is it Seviche?


    This past weekend I had the honor of trying my first bite of Ceviche, which is a popular seafood dish in the coastal regions of the Americas, Central and South America, and the Philippines.  I have experienced alot of great food in my life... but how did I miss out on this popular dish?   The dish is typically made from fresh raw fish marinated in citrus juices such as lemon or lime and various spices.  Most importantly, the dish is not cooked with heat, it must be prepared fresh to minimize the risk of food poisoning (maybe that is why I avoided it.. as you know my fear of food poisoning).   Ceviche is marinated usually in a citrus-based mixture, with lemons and limes being the most commonly used.  The citric acid causes the proteins in the seafood to become denatured. Traditional style ceviche is marinated for about 3 hours....so there you have it!!  This picture does not do justice.. but the yellow fruit in the picture mixed with the ceviche is mango... and what a beautiful combination.

    Did I mention.. that while we were eating this at the beach front restaurant... guess what happened on the water in front of us....


    A group of whales jumped out of the ocean...and of course we freaked out.. but kept on drinking.. as this was a monumental day!!
